NPC inserting / modding??

I'd like to either create an NPC or modify an existing NPC's dialogue or selling items list. Any ideas? Should I be digging through the lua scripts? Or can it be done in the database. Thanks

No, I know where to find it in the database, I'm unsure of what and where to modify. All I see is where they are (x,y) and their basic makeup ie which skin/ sex / race / clothes. No reference to what they sell or the cost of their items. THAT is what I'm looking for.
